I really like this small version of the recipe because I can enjoy it multiple times during the day! These mini peanut butter pies are a fantastic treat for anyone who loves peanut butter. The smooth peanut butter filling on top of a graham cracker base makes for a delicious dessert that’s simple to prepare and perfect for portion control.
Ingredients
- 1 cup smooth peanut butter
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 12 small graham cracker pie crusts
- Chocolate shavings or small peanut butter candies (optional, for decoration)
Directions
- Mix the Filling: In a large bowl, combine the peanut butter and powdered sugar until smooth.
- Whip the Cream: In another bowl, beat the heavy whipping cream and vanilla extract until stiff peaks form. Be careful not to over-whip!
- Combine: Gently fold the whipped cream into the peanut butter mixture until just combined. Keeping some air in the whipped cream will make the filling lighter.
- Fill the Crusts: Evenly distribute the filling into the small graham cracker crusts. Use a kitchen tool to smooth the tops.
- Chill: Place the pies in the refrigerator for at least 2 hours, or until the filling is firm.
- Decorate and Serve: When ready to serve, top with chocolate shavings or small peanut butter candies if desired.
Enjoy these mini peanut butter pies as a delightful treat throughout the day!
