Mexican Tortilla Casserole is an easy-to-prepare, vegetarian meal that’s perfect for weeknight meals or a gathering of friends.
Ingredients
- 1 lb. ground beef
- 1/2 cup diced onion
- 1 pack taco seasoning mix
- 2 cups shredded cheddar cheese
- 1 can refried beans (spread easier if you warm them in the microwave)
- 1 cup prepared rice (such as Minute Rice)
- 1 can Mexican blend corn (drained; will only use about 1/2 can)
- 4-5 large flour tortillas
- 8 oz of thick chunky salsa (your choice of mild or hot)
Instructions
- Preheat the oven to 350°F (175°C). Spray a springform pan, round cake pan, or casserole dish with cooking spray.
- In a skillet, brown the ground beef and diced onion. Drain any excess fat.
- Add the taco seasoning to the beef and cook according to the package directions.
- Lay one tortilla at the bottom of the prepared baking dish. Spread 1/3 of the refried beans over the tortilla, then top with 1/3 of the meat mixture and a sprinkle of cheese.
- For the second layer, place another tortilla on top. Add 1/2 of the rice, 1/2 of the salsa, 1/2 of the corn, and a layer of cheese.
- For the third layer, add another tortilla, 1/3 of the refried beans, 1/3 of the meat mixture, and a layer of cheese.
- For the fourth layer, place the final tortilla. Add the remaining refried beans, meat, corn, rice, salsa, and top with cheese.
- Cover the dish with foil and bake for about 40 minutes. Uncover and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Let the casserole sit for 5 minutes before cutting. After baking, top with sour cream, diced onion, and shredded lettuce if desired.
Serve warm and enjoy!
