Chocolate Rice Krispie Balls



  • 1/2 cup peanut butter
  • 3 tablespoons softened butter
  • 1 teaspoon vanilla extract
  • 1 cup Rice Krispies cereal
  • 1/2 cup chopped pecans
  • 1 cup shredded coconut
  • 1 bag of chocolate chips
  • 1 square of sweet chocolate


  1. Preparing the Mixture:
    • In a mixing bowl, combine 1/2 cup of peanut butter, 3 tablespoons of softened butter, and 1 teaspoon of vanilla extract.
    • Add 1 cup of Rice Krispies cereal, 1/2 cup of chopped pecans, and 1 cup of shredded coconut to the mixture.
    • Thoroughly mix all the ingredients until well blended.
  2. Shaping the Balls:
    • Once the mixture is ready, roll it into small, bite-sized balls for easy enjoyment.
    • Place the formed balls in the refrigerator for at least 30 minutes to firm up.
  3. Melting the Chocolate:
    • Set up a double boiler to melt the chocolate for coating.
    • Melt 1 package of chocolate chips and 1 square of sweet chocolate in the double boiler.
    • Maintain low heat to keep the chocolate soft and workable.
  4. Coating with Chocolate:
    • Dip each chilled Rice Krispie ball, one at a time, into the melted chocolate mixture.
    • Use a fork to ensure that each ball is evenly coated with chocolate.
    • Place the chocolate-covered balls on a tray lined with parchment paper.
  5. Cooling and Setting:
    • Transfer the tray with the chocolate-coated balls to the refrigerator.
    • Allow them to cool and set for at least an hour, or until the chocolate hardens.
    • These delightful treats can also be frozen for longer storage.
