Homemade Tapioca Pudding Recipe

Ingredients

1/2 cup small pearl tapioca
3 cups whole milk
1/4 tsp salt
1/2 cup sugar
2 large eggs
1 tsp vanilla extract

Instructions

Prepare Tapioca Mixture:
In a saucepan, whisk together tapioca, milk, and salt over medium-high heat until it simmers, stirring often.

Add Sugar and Cook:
Reduce heat to low and gradually whisk in sugar.
Cook uncovered for 20-30 minutes, stirring frequently until tapioca pearls are plumped and the mixture thickens like pudding.

Beat Eggs and Temper:
In a bowl, beat the eggs.
Slowly whisk 1/2 cup of the hot tapioca mixture into the eggs to temper them.
Whisk tempered eggs into the saucepan with the tapioca pudding.

Thicken and Flavor:
Increase heat to medium and cook for 2-3 minutes, stirring constantly until it thickens like custard, but don’t let it boil.
Remove from heat and stir in vanilla.

Serve or Chill:
Let it cool slightly for warm serving or chill thoroughly for a thicker pudding consistency before serving.
