500-600 grams of baking potatoes, cleaned and dried
1 large egg
1/4 cup milk

Seasoning Mix:

1/2 cup all-purpose flour
1/4 cup cornstarch
1/2 tsp salt
1/4 tsp paprika
3/8 tsp garlic powder
3/4 tsp onion powder
1/4 tsp dried oregano
1/4 tsp dried thyme
1/4 tsp black pepper
1/2 tsp cayenne pepper

For the Dip:

1.5 cups mayonnaise
1/8 tsp garlic powder
1 tbsp lemon juice
Salt, pepper, and spicy paprika to taste

Instructions

  1. Slice the potatoes into 1/2-inch thick pieces. In a bowl, whisk together the egg and milk.
  2. In a separate bowl, combine all the seasoning ingredients.
  3. Dip each potato slice in the egg-milk mixture, then coat it in the seasoning mix. Shake off any excess and let it rest for about ten minutes.
  4. Heat oil to 160°C. Check the oil’s readiness with a wooden chopstick; if bubbles form around the stick, it’s ready. Fry the potatoes in batches until golden brown, about 2 minutes per batch. Drain on a cooling rack.
  5. For extra crunch, increase the oil temperature slightly and re-fry each batch for an additional 30 seconds. Drain and let it cool on the rack.
  6. Prepare the dip by mixing mayonnaise, garlic powder, lemon juice, and seasoning it with salt, pepper, and spicy paprika to taste.
