Who can resist the allure of a homemade chocolate cake? Especially when it’s a family favorite that has the kids eagerly waiting for a slice. The Mississippi Mud Cake, with its delicious topping and warm, mouth-watering chocolate, is an unforgettable treat. The melted marshmallows add a unique touch, making this cake truly one-of-a-kind.

When the craving for a chocolate cake hits, the Mississippi Mud Cake is the go-to recipe. This recipe, perfected over many years, results in layers so soft that you can taste the chocolate deep within them. Named the ‘mud cake’ for its topping and frosting, this cake is surprisingly easy to make at home. All you need is a flat 9×13 pan.

While many use buttermilk in their recipe, this version substitutes it with milk and a bit of sour cream to keep the cake moist. The result is a cake that stays just as delightful.

The chocolate frosting in this recipe is versatile and can be used for other cakes as well, such as the Texas Sheet Cake.

Ingredients

Ingredients

  • 2 cups of flour
  • 1 and a half cups of granulated sugar
  • Half cup of brown sugar
  • A pinch of salt

  • Half a cup each of cocoa powder and oil (canola or vegetable oil)
  • 1 teaspoon of vanilla essence
  • 1 cup of boiling water
  • 6 tablespoons of milk
  • 3 tablespoons of sour cream

For the topping:

  • 1 pack of mini marshmallows
  • 1 cup of butter
  • 6 tablespoons of milk
  • 2 tablespoons of cocoa butter
  • 3 cups of powdered sugar
  • 1 teaspoon of vanilla essence

Instructions

  1. Preheat the oven to 350 degrees and grease the baking pan.
  2. In a bowl, combine all the dry ingredients.
  3. In another bowl, beat the other ingredients at high speed. Gradually add the dry ingredients to this mixture.
  4. Transfer the mixture to the baking pan and bake for 28-30 minutes. The cake is done when a toothpick inserted into it comes out clean.
  5. Remove the cake from the oven and add the marshmallows to the top. Bake for an additional 2-3 minutes until the marshmallows melt.

  7. Allow the frosting to cool in the fridge before adding it to the cake. The cake can be served hot or cooled for a few hours.
  8. Enjoy this delightful homemade chocolate treat! It’s a dessert, it’s a cake, it’s a little bit of everything good!
