Slow Cooker Rotisserie Chicken: A Simple and Delicious Home-Cooked Meal

Ingredients

  • 1 Whole Chicken (about 4 lbs.), neck and giblets removed
  • 1 teaspoon Chili Powder
  • 3 teaspoons Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 2 teaspoons Dried Parsley
  • 1 teaspoon Dried Thyme
  • ½ teaspoon Freshly Ground Black Pepper
  • 1 teaspoon Salt (adjust to taste)

Instructions

Start by preparing your slow cooker with a cooking spray. Create a makeshift rack using four balls of aluminum foil, placed at the bottom of the cooker. This will keep the chicken elevated, allowing the juices to collect beneath it.

Next, prepare the chicken. Remove the neck and giblets, rinse the chicken with water, and pat it dry using paper towels.

In a separate bowl, combine the salt, pepper, and other seasonings. Apply this mixture all over the chicken skin, ensuring it’s well-coated.

Place the seasoned chicken on top of the aluminum foil in the slow cooker. Cover it with the lid and let it cook. If you’re using the low setting, it should be ready in about 7 to 7.5 hours. If you’re using the high setting, it will take around 4 to 4.5 hours. The chicken is cooked through once it reaches an internal temperature of 165 F.

Once cooked, carefully remove the chicken from the slow cooker. It will be very tender and may fall apart if not handled gently.
