Introduction

Crispy on the outside, fluffy and cheesy on the inside—these Cheesy Mashed Potato Puffs are the perfect way to turn leftover mashed potatoes into a crowd-pleasing snack or side dish. Baked in muffin tins, these bite-sized treats are great for brunch, parties, or cozy dinners. Serve them with sour cream, chives, or a sprinkle of extra cheese for a dish that’s impossible to resist.


Ingredients (Makes about 12 puffs)

  • 2 cups cold mashed potatoes
  • 2 large eggs
  • 1 cup shredded cheddar cheese (or cheese blend of choice)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions or chives
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • Butter or nonstick spray (for greasing the muffin tin)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 12-cup muffin tin with butter or cooking spray.
  2. Mix the filling:
    In a large bowl, combine mashed potatoes, eggs, shredded cheese, Parmesan, green onions, garlic powder, salt, and pepper. Mix until smooth and well combined.
  3. Fill the muffin tin:
    Spoon the mixture into the muffin cups, filling each about 3/4 full. You can top with a little extra cheese or chives if desired.
  4. Bake for 25–30 minutes, or until the tops are golden brown and the edges are crispy.
  5. Cool slightly and serve:
    Let the puffs rest for 5 minutes before removing from the pan. Serve warm with sour cream, hot sauce, or extra herbs on top.
