Ingredients (Serves 6–8)

  • 1 lb (450g) ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4–5 medium potatoes, thinly sliced
  • 1 can (10.5 oz) cream of mushroom or cream of cheddar soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • Optional: chopped parsley or green onions for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook the beef mixture:
In a large skillet, cook the ground beef and chopped onion over medium heat until browned. Drain excess fat, then stir in minced garlic, salt, pepper, and paprika. Cook for 1 more minute, then remove from heat.
  3. Prepare the sauce:
In a small bowl, whisk together the cream of mushroom soup and milk until smooth.
  4. Assemble the casserole:
    • Layer half of the thinly sliced potatoes in the bottom of the baking dish.
    • Spoon half the beef mixture over the potatoes.
    • Pour half the soup mixture over the top and sprinkle with 1/2 cup of cheese.
    • Repeat with the remaining potatoes, beef, soup mixture, and top with the remaining cheese.
  5. Cover and bake:
Cover tightly with foil and bake for 60–70 minutes, or until the potatoes are tender when pierced with a fork.
  6. Uncover and finish baking:
Remove foil and bake for another 10–15 minutes, or until the top is golden and bubbly.
  7. Rest and serve:
Let the casserole sit for 5–10 minutes before slicing. Garnish with parsley or green onions if desired.
