Cream Cheese Cake

Ingredients:

  • 1 (8 oz) package cream cheese, room temperature
  • 3/4 cup vegetable oil
  • 2 cups granulated sugar
  • 3 eggs
  • 1 ½ teaspoons vanilla extract
  • 3 cups flour
  • 1 tablespoon baking powder
  • 1 ½ teaspoons salt
  • 1 ¼ cups buttermilk

Frosting:

  • 1 cup butter, room temperature
  • 1 (8 oz) package cream cheese, room temperature
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 4-5 cups powdered sugar

Preparation:

  1. Preheat the oven to 325°F and grease a 9×13-inch baking dish.
  2. In a large bowl, beat the cream cheese until smooth, then mix in the oil and sugar.
  3. Add the eggs one at a time, mixing in between additions, then add the vanilla.
  4. In a small bowl, sift together the flour, baking powder, and salt. Mix the dry ingredients into the wet ingredients just until combined. Gently mix in the buttermilk until smooth.
  5. Transfer the batter to the prepared baking dish and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to fully cool while you make the frosting.
  7. In a large bowl, mix the cream cheese and butter until smooth. Slowly add in the powdered sugar, then the salt, until fully combined.
  8. Frost the cooled cake and refrigerate until ready to serve
