Mexican Tortilla Casserole

Mexican Tortilla Casserole is an easy-to-prepare, vegetarian meal that’s perfect for weeknight meals or a gathering of friends.

Ingredients

  • 1 lb. ground beef
  • 1/2 cup diced onion
  • 1 pack taco seasoning mix
  • 2 cups shredded cheddar cheese
  • 1 can refried beans (spread easier if you warm them in the microwave)
  • 1 cup prepared rice (such as Minute Rice)
  • 1 can Mexican blend corn (drained; will only use about 1/2 can)
  • 4-5 large flour tortillas
  • 8 oz of thick chunky salsa (your choice of mild or hot)

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a springform pan, round cake pan, or casserole dish with cooking spray.
  2. In a skillet, brown the ground beef and diced onion. Drain any excess fat.
  3. Add the taco seasoning to the beef and cook according to the package directions.
  4. Lay one tortilla at the bottom of the prepared baking dish. Spread 1/3 of the refried beans over the tortilla, then top with 1/3 of the meat mixture and a sprinkle of cheese.
  5. For the second layer, place another tortilla on top. Add 1/2 of the rice, 1/2 of the salsa, 1/2 of the corn, and a layer of cheese.
  6. For the third layer, add another tortilla, 1/3 of the refried beans, 1/3 of the meat mixture, and a layer of cheese.
  7. For the fourth layer, place the final tortilla. Add the remaining refried beans, meat, corn, rice, salsa, and top with cheese.
  8. Cover the dish with foil and bake for about 40 minutes. Uncover and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Let the casserole sit for 5 minutes before cutting. After baking, top with sour cream, diced onion, and shredded lettuce if desired.

Serve warm and enjoy!
