Ingredients
For the Brownies:

- 1 cup granulated sugar
- 2 eggs
- 3 teaspoons vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1 cup all-purpose flour
For the Frosting:
- 2 tablespoons butter, softened
- 3 tablespoons milk
- 2 tablespoons unsweetened cocoa powder
- 1 1/2 cups powdered sugar
How to Make Lunch Lady Brownies
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with foil, ensuring the foil comes up over the sides.
- Prepare the Brownie Batter:
- In a mixing bowl, cream together the melted butter and granulated sugar until the mixture lightens in both color and texture.
- Add the eggs and vanilla extract, stirring until fully incorporated.
- Gradually mix in the flour and unsweetened cocoa powder, blending until the batter is uniform in color.
- Bake the Brownies:
- Pour the batter into the prepared baking dish.
- Bake for 20-25 minutes, or until a knife inserted in the center comes out mostly dry with a few moist crumbs. Be careful not to overbake for the best texture.
- Make the Frosting:
- While the brownies are cooling, combine the softened butter, milk, cocoa powder, and powdered sugar in a medium bowl. Mix until a smooth frosting forms.
- If the frosting is too dry, add more milk one tablespoon at a time. If it’s too runny, add more powdered sugar one tablespoon at a time.
- Frost the Brownies:
- Spread the frosting over the brownies while they are still warm, allowing some of the icing to melt into the brownies.
- Once cooled, cut into squares. Use the foil to help lift the brownies out of the pan.
