**Ingredients:**

– 1 3-ounce package lime flavored gelatin
– 1 1/3 cups granulated sugar
– 2 cups sifted all-purpose flour

– 3/4 cup orange juice
– 1 tablespoon lime juice

– 1/2 cup key lime juice (from about 25 small key limes or 4 large regular limes)
– 1/2 cup confectioners’ sugar
**Icing:**
– 1/2 cup (1 stick) butter, room temperature
– 1 8-ounce package cream cheese, room temperature
– 1 tablespoon lime juice
– 1 1/2 teaspoons lime zest (optional)
– 1 pound box confectioners’ sugar
**Directions:**
1. Preheat the oven to 350°F. Grease and flour one 9×13-inch cake pan.
2. In a large mixing bowl, combine the gelatin, granulated sugar, flour, salt, baking powder, and baking soda. Mix well.
3. Add the vegetable oil, orange juice, lime juice, vanilla extract, and beaten eggs to the dry ingredients. Mix until well combined.
4. Pour the batter evenly into the prepared cake pan. Bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean.
5. While the cake is baking, prepare the glaze. Mix the key lime juice and confectioners’ sugar until well combined.
6. Once the cake is done, remove it from the oven and let it cool in the pan for 5 minutes. Then turn it out onto a cooling rack.
7. While the cake is still hot, pierce it with a fork and pour the lime glaze over the top. Allow the cake to cool completely.
8. For the icing, cream together the butter and cream cheese until smooth. Beat in the lime juice and lime zest (if using). Gradually add the confectioners’ sugar and beat until the icing is smooth and easy to spread.
9. Spread the icing evenly over the cooled cake.
10. Optionally, you can use three 9-inch round cake pans to make a layer cake instead. Adjust baking time accordingly.
