 - 1/4 cup chopped nuts (optional)
 - 1 teaspoon baking powder
 - 1/2 teaspoon baking soda
 - 1/2 teaspoon ground cinnamon
 - 1/4 teaspoon ground nutmeg
 - 1/4 teaspoon salt
 - 1 teaspoon vanilla extract
 
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and lightly dust it with flour.
 - In a large mixing bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
 - In another bowl, mix the orange juice, sugar, vegetable oil, and vanilla extract until the sugar dissolves.
 - Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the dried fruits and chopped nuts (if using).
 - Pour the batter into the prepared cake pan and smooth the top.
 - Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
 - Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
