For the Chicken:
- 1 lb boneless, skinless chicken breasts or thighs
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil (for cooking)
For the Street Corn:
- 2 cups corn (fresh, canned, or frozen & drained)
- 2 tbsp mayonnaise
- 2 tbsp sour cream
- 1 tbsp lime juice
- ½ tsp lime zest
- ¼ tsp chili powder
- ¼ tsp salt
- ⅓ cup crumbled cotija cheese (or feta)
- 2 tbsp chopped fresh cilantro
For the Bowl Base:
- 2 cups cooked rice (white, brown, or cauliflower rice)
Optional Toppings:
- Sliced avocado
- Sliced jalapeños
- Chopped green onions
- Extra cotija cheese
- Fresh lime wedges
- Crushed tortilla chips for crunch

1. Prepare the Chicken:
- In a small bowl, mix together the chili powder, cumin, paprika, garlic powder, salt, and pepper.
- Rub the spice mix evenly over both sides of the chicken.
- Heat olive oil in a skillet over medium heat. Add the chicken and cook for 5–6 minutes per side, until golden and cooked through.
- Remove from the pan and let rest for 5 minutes. Slice into strips.
2. Make the Street Corn Mixture:
- In a large bowl, mix together the corn, mayonnaise, sour cream, lime juice, lime zest, chili powder, and salt.
- Stir until creamy and well combined.
- Fold in the cotija cheese and cilantro.
3. Assemble the Bowls:
- Divide the cooked rice evenly into 4 serving bowls.
- Top each with sliced chicken and a generous scoop of the creamy street corn mixture.
- Add your favorite toppings: avocado, jalapeños, extra cheese, green onions, lime wedges, or crushed tortilla chips.
- Serve immediately and enjoy!
