For the Chicken:

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil (for cooking)

For the Street Corn:

  • 2 cups corn (fresh, canned, or frozen & drained)
  • 2 tbsp mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp lime juice
  • ½ tsp lime zest
  • ¼ tsp chili powder
  • ¼ tsp salt
  • ⅓ cup crumbled cotija cheese (or feta)
  • 2 tbsp chopped fresh cilantro

For the Bowl Base:

  • 2 cups cooked rice (white, brown, or cauliflower rice)

Optional Toppings:

  • Sliced avocado
  • Sliced jalapeños
  • Chopped green onions
  • Extra cotija cheese
  • Fresh lime wedges
  • Crushed tortilla chips for crunch

1. Prepare the Chicken:

  1. In a small bowl, mix together the chili powder, cumin, paprika, garlic powder, salt, and pepper.
  2. Rub the spice mix evenly over both sides of the chicken.
  3. Heat olive oil in a skillet over medium heat. Add the chicken and cook for 5–6 minutes per side, until golden and cooked through.
  4. Remove from the pan and let rest for 5 minutes. Slice into strips.

2. Make the Street Corn Mixture:

  1. In a large bowl, mix together the corn, mayonnaise, sour cream, lime juice, lime zest, chili powder, and salt.
  2. Stir until creamy and well combined.
  3. Fold in the cotija cheese and cilantro.

3. Assemble the Bowls:

  1. Divide the cooked rice evenly into 4 serving bowls.
  2. Top each with sliced chicken and a generous scoop of the creamy street corn mixture.
  3. Add your favorite toppings: avocado, jalapeños, extra cheese, green onions, lime wedges, or crushed tortilla chips.
  4. Serve immediately and enjoy!
