For the Cobbler:
- 1 cup + 3 tablespoons flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¾ cup granulated sugar
- 1 ½ teaspoons cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon cloves
- ½ cup pumpkin puree
- ¼ cup whole milk
- ¼ cup butter, melted
- 3 teaspoons vanilla extract
For the Topping:
- ½ cup granulated sugar
- ½ cup brown sugar
- ¼ cup chopped pecans
- 1 ½ cups very hot water
Instructions
1. Prepare the Batter
- Preheat oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves. Set aside.
- In a small bowl, mix pumpkin puree, milk, melted butter, and vanilla until well combined.
- Pour wet ingredients into dry ingredients and stir to create a thick batter.
- Transfer batter into a greased 8-inch casserole dish with high sides.
2. Add the Pecan Topping
- In a separate bowl, mix granulated sugar, brown sugar, and chopped pecans.
- Evenly sprinkle the topping over the batter.
3. Create the Caramel Sauce
- Carefully pour hot water over the entire cobbler.
- Do not stir! The hot water helps create the gooey caramel sauce at the bottom.
4. Bake the Cobbler
- Place the casserole dish on a baking sheet (in case it bubbles over).
- Bake for 40 minutes, or until the middle is set and the topping is golden brown.
- Let cool for 5-10 minutes before serving.
