For the Cobbler:

  • 1 cup + 3 tablespoons flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cloves
  • ½ cup pumpkin puree
  • ¼ cup whole milk
  • ¼ cup butter, melted
  • 3 teaspoons vanilla extract

For the Topping:

 

  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ¼ cup chopped pecans
  • 1 ½ cups very hot water

Instructions

1. Prepare the Batter

  • Preheat oven to 350°F (175°C).
  • In a medium bowl, whisk together flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves. Set aside.
  • In a small bowl, mix pumpkin puree, milk, melted butter, and vanilla until well combined.
  • Pour wet ingredients into dry ingredients and stir to create a thick batter.
  • Transfer batter into a greased 8-inch casserole dish with high sides.

2. Add the Pecan Topping

  • In a separate bowl, mix granulated sugar, brown sugar, and chopped pecans.
  • Evenly sprinkle the topping over the batter.

3. Create the Caramel Sauce

  • Carefully pour hot water over the entire cobbler.
  • Do not stir! The hot water helps create the gooey caramel sauce at the bottom.

4. Bake the Cobbler

 

  • Place the casserole dish on a baking sheet (in case it bubbles over).
  • Bake for 40 minutes, or until the middle is set and the topping is golden brown.
  • Let cool for 5-10 minutes before serving.
