When tomatoes are plenty and I fill my stock amply with tomato sauce, I make this. It’s a little bit sweet, a little bit spicy, and super satisfying on buttered crackers or on toasted bread with cream cheese and bacon (try it might surpass your average BLT)


Ingredients

  • Tomatoes (prepped and chopped)
  • Brown sugar
  • Apple cider vinegar
  • Ginger (grated or minced)
  • Salt
  • Cayenne pepper
  • Cinnamon
  • Cloves

Instructions

  1. Add the prepped tomatoes to a pot.
  2. Mix in brown sugar, apple cider vinegar, ginger, salt, cayenne pepper, cinnamon, and cloves.
  3. Bring the mixture to a boil, then reduce the heat to a simmer.
  4. Let it cook for 20 to 30 minutes, stirring occasionally, until it thickens to a jam-like consistency.
  5. Allow the Tomato Jam to cool completely before serving.
