Instructions
Instructions
Step 1: Marinate the Chicken
- In a large bowl, whisk together buttermilk, hot sauce, salt, and black pepper.
- Add the chicken thighs and drumsticks, ensuring they are fully submerged.
- Cover and refrigerate for at least 4 hours (overnight for best results).
Step 2: Prepare the Coating
- In a shallow dish, mix flour, cornstarch, paprika, garlic powder, onion powder, cayenne, baking powder, salt, and black pepper.
- Remove chicken from the buttermilk marinade, letting the excess drip off.
- Dredge each piece in the seasoned flour mixture, ensuring an even coat.
- For extra crunch, dip back into the buttermilk and dredge in the flour again.
Step 3: Fry the Chicken
- Heat oil in a deep skillet or Dutch oven to 350°F (175°C).
- Fry chicken in batches, 4-5 pieces at a time, to prevent overcrowding.
- Cook for 12-15 minutes, flipping halfway through, until golden brown and crispy.
- Use a thermometer to check the internal temperature—it should be 165°F (74°C).
Step 4: Drain and Serve
- Transfer fried chicken to a wire rack (not paper towels) to drain excess oil.
- Let it rest for 5 minutes before serving.
- Serve hot with your favorite Southern sides! 🍗
