  1. In a shallow dish, mix flour, cornstarch, paprika, garlic powder, onion powder, cayenne, baking powder, salt, and black pepper.
  2. Remove chicken from the buttermilk marinade, letting the excess drip off.
  3. Dredge each piece in the seasoned flour mixture, ensuring an even coat.
  4. For extra crunch, dip back into the buttermilk and dredge in the flour again.

Step 3: Fry the Chicken

  1. Heat oil in a deep skillet or Dutch oven to 350°F (175°C).
  2. Fry chicken in batches, 4-5 pieces at a time, to prevent overcrowding.
  3. Cook for 12-15 minutes, flipping halfway through, until golden brown and crispy.
  4. Use a thermometer to check the internal temperature—it should be 165°F (74°C).

Step 4: Drain and Serve

  1. Transfer fried chicken to a wire rack (not paper towels) to drain excess oil.
  2. Let it rest for 5 minutes before serving.
