Making the Biscuits
- Preheat the oven to 425°F (218°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Slowly add buttermilk and stir until the dough just comes together (do not overmix).
- Turn the dough onto a floured surface and gently knead 3-4 times. Roll it out to ¾-inch thickness and cut biscuits using a round cutter.
- Place biscuits on the baking sheet and bake for 12-15 minutes, or until golden brown.
Making the Sausage Gravy
- In a large skillet, cook the sausage over medium heat, breaking it into crumbles, until fully browned.
- Sprinkle the flour over the sausage and stir, cooking for about 1-2 minutes to eliminate the raw flour taste.
- Slowly pour in the milk, stirring constantly to prevent lumps.
- Season with salt, black pepper, and cayenne (if using), then simmer for 5-7 minutes, or until thickened.
