- 2 bunches of collard greens, washed and chopped
- 6 slices of bacon, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste

- Prepare the greens: Wash the collard greens thoroughly to remove any grit. Remove the tough stems and chop the leaves into bite-sized pieces.
- Cook the bacon: In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving a little bit of the bacon grease in the pot.
- Sauté the vegetables: In the same pot, add the chopped onions and garlic. Sauté for about 3 minutes or until the onions become translucent.
- Add the greens: Add the chopped collard greens to the pot and stir to combine with the onions and garlic.
- Simmer: Pour in the chicken broth, apple cider vinegar, and red pepper flakes (if using). Bring the mixture to a simmer and cook for about 45 minutes, stirring occasionally, until the greens are tender.
- Finish the dish: Add the cooked bacon back into the pot and stir. Season with salt and pepper to taste.
- Serve: Serve your collard greens with bacon hot, either as a main dish or as a side.
