Ingredients:

  • 2 bunches of collard greens, washed and chopped
  • 6 slices of bacon, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

  1. Prepare the greens: Wash the collard greens thoroughly to remove any grit. Remove the tough stems and chop the leaves into bite-sized pieces.
  2. Cook the bacon: In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving a little bit of the bacon grease in the pot.
  3. Sauté the vegetables: In the same pot, add the chopped onions and garlic. Sauté for about 3 minutes or until the onions become translucent.
  4. Add the greens: Add the chopped collard greens to the pot and stir to combine with the onions and garlic.
  5. Simmer: Pour in the chicken broth, apple cider vinegar, and red pepper flakes (if using). Bring the mixture to a simmer and cook for about 45 minutes, stirring occasionally, until the greens are tender.
  6. Finish the dish: Add the cooked bacon back into the pot and stir. Season with salt and pepper to taste.
  7. Serve: Serve your collard greens with bacon hot, either as a main dish or as a side.
