  • ¾ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

For Garnish:

  • Powdered sugar

1. Prepare the Pastry Dough

  1. Combine flour and sugar in a mixing bowl.
  2. Add chilled butter and mix with a pastry cutter or fingers until the texture resembles coarse crumbs.
  3. Mix in the egg yolk and cold water (one teaspoon at a time) until the dough forms a ball.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

2. Make the Berry Filling

  1. In a saucepan, combine berries, sugar, lemon juice, and cornstarch.
  2. Cook over medium heat, stirring continuously, until the mixture thickens (about 5-7 minutes).
  3. Remove from heat and allow to cool completely.

3. Whip the Cream Filling

  1. In a chilled bowl, whip the heavy cream until soft peaks form.
  2. Gradually add powdered sugar and vanilla extract, whipping until stiff peaks form.

4. Assemble the Pastry Balls

  1. Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper.
  2. Roll out the chilled dough to about ⅛-inch thickness on a floured surface.
  3. Cut the dough into 2-inch squares or circles.
  4. Place a small spoonful of berry filling and cream filling in the center of each dough piece.
  5. Fold the edges of the dough and seal to form balls.

5. Bake and Serve

  1. Arrange the pastry balls on the prepared baking tray.
  2. Bake for 15-18 minutes, or until golden brown.
  3. Cool completely before dusting with powdered sugar and garnishing with mint leaves.
