1. Prepare the Pastry Dough
- Combine flour and sugar in a mixing bowl.
- Add chilled butter and mix with a pastry cutter or fingers until the texture resembles coarse crumbs.
- Mix in the egg yolk and cold water (one teaspoon at a time) until the dough forms a ball.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
2. Make the Berry Filling
- In a saucepan, combine berries, sugar, lemon juice, and cornstarch.
- Cook over medium heat, stirring continuously, until the mixture thickens (about 5-7 minutes).
- Remove from heat and allow to cool completely.
3. Whip the Cream Filling
- In a chilled bowl, whip the heavy cream until soft peaks form.
- Gradually add powdered sugar and vanilla extract, whipping until stiff peaks form.
4. Assemble the Pastry Balls
- Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper.
- Roll out the chilled dough to about ⅛-inch thickness on a floured surface.
- Cut the dough into 2-inch squares or circles.
- Place a small spoonful of berry filling and cream filling in the center of each dough piece.
- Fold the edges of the dough and seal to form balls.
5. Bake and Serve
- Arrange the pastry balls on the prepared baking tray.
- Bake for 15-18 minutes, or until golden brown.
- Cool completely before dusting with powdered sugar and garnishing with mint leaves.
