  • 1/2 cup (100g) brown sugar, packed
  • 810 pineapple rings (fresh or canned)

For the Cake Batter:

  • 1 3/4 cups (220g) all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (120g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) whole milk
  • 1/2 cup (120ml) pineapple juice (from canned pineapples or fresh juice)

Instructions

1. Prepare the Topping:

  • Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  • Pour melted butter evenly over the bottom of the pan. Sprinkle brown sugar over the butter.
  • Arrange pineapple rings on top of the brown sugar in a decorative pattern. Optionally, place maraschino cherries in the center of each pineapple ring.

2. Make the Batter:

  • In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs, one at a time, then mix in the vanilla extract.
  • Gradually add the dry ingredients in three parts, alternating with milk and pineapple juice. Start and end with the dry ingredients, mixing until just combined.

3. Assemble and Bake:

  • Pour the batter evenly over the prepared pineapple topping. Smooth the surface with a spatula.
  • Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.

4. Cool and Flip:

  • Let the cake cool in the pan for 10 minutes.
  • Run a knife around the edges to loosen the cake. Place a serving plate over the pan and carefully invert. Lift the pan to reveal the caramelized pineapple topping.
