Instructions
Make the Dough:
- In a large bowl, beat the softened butter and powdered sugar until light and fluffy. Optionally, mix in the vanilla extract.
- Combine flour, cornstarch, and salt in a separate bowl. Gradually add this dry mixture to the butter mixture, mixing until a soft dough forms.
2. Shape the Cookies:
- Divide the dough into two portions. Shape each portion into a log approximately 2 inches thick.
- Wrap each log in plastic wrap and refrigerate for at least 1 hour to make slicing easier and prevent spreading during baking.
3. Bake the Cookies:
- Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
- Slice the chilled dough into 1/4-inch-thick rounds and place them on the prepared baking sheet.
