- Cake:
- 1 package yellow cake mix
- 1 package (3.5 oz) instant lemon pudding mix
- 4 eggs
- ¾ cup vegetable or canola oil
- Glaze:
- 4 cups powdered sugar
- ⅓ cup fresh lemon juice
- Zest of one lemon
- 3 tablespoons vegetable or canola oil
- 3 tablespoons water
Instructions
- Prepare the Muffins:
- Preheat the oven to 350°F (175°C).
- Coat a miniature muffin pan with non-stick cooking spray.
- In a large bowl, combine the cake mix, pudding mix, eggs, and oil. Blend with an electric mixer for two minutes.
- Spoon 1 tablespoon of the batter into each muffin cup.
- Bake for 12 minutes. Remove from the oven and turn the muffins onto a towel.
- Make the Glaze:
- In a medium bowl, sift the powdered sugar.
- Add lemon juice, zest, oil, and water, mixing until smooth.
- Glaze the Blossoms:
- While the muffins are still warm, dip each one into the glaze, coating as much as possible.
- Place the glazed muffins on wire racks with wax paper underneath to catch any drips.
- Allow the glaze to set before serving or storing in an airtight container.
Optional: Add small pieces of candied fruit on top of each blossom right after glazing for an extra touch.
