  • Cake:
    • 1 package yellow cake mix
    • 1 package (3.5 oz) instant lemon pudding mix
    • 4 eggs
    • ¾ cup vegetable or canola oil
  • Glaze:
    • 4 cups powdered sugar
    • ⅓ cup fresh lemon juice
    • Zest of one lemon
    • 3 tablespoons vegetable or canola oil
    • 3 tablespoons water

Instructions

  1. Prepare the Muffins:
    • Preheat the oven to 350°F (175°C).
    • Coat a miniature muffin pan with non-stick cooking spray.
    • In a large bowl, combine the cake mix, pudding mix, eggs, and oil. Blend with an electric mixer for two minutes.
    • Spoon 1 tablespoon of the batter into each muffin cup.
    • Bake for 12 minutes. Remove from the oven and turn the muffins onto a towel.
  2. Make the Glaze:
    • In a medium bowl, sift the powdered sugar.
    • Add lemon juice, zest, oil, and water, mixing until smooth.
  3. Glaze the Blossoms:
    • While the muffins are still warm, dip each one into the glaze, coating as much as possible.
    • Place the glazed muffins on wire racks with wax paper underneath to catch any drips.
    • Allow the glaze to set before serving or storing in an airtight container.

Optional: Add small pieces of candied fruit on top of each blossom right after glazing for an extra touch.
