  • For the bread:
    • ¼ cup canola oil
    • ¼ cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs, room temperature
    • 1 teaspoon vanilla extract
    • 1½ cups all-purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon salt
    • ½ cup buttermilk (or substitute with ½ cup milk + ½ teaspoon vinegar)
    • ½ teaspoon cinnamon
    • ½ teaspoon molasses
  • For the coating:
    • ½ cup melted butter
    • ¼ cup granulated sugar
    • ¼ cup brown sugar
    • ½ teaspoon ground cinnamon

Instructions

  • Preheat Oven and Prepare Batter: Preheat your oven to 350°F (175°C). In a large bowl, cream together the oil, butter, and sugar until light and fluffy. Add in the eggs one at a time, then stir in the vanilla extract.
  • Combine Dry Ingredients and Buttermilk: Gradually add the flour, baking powder, salt, and cinnamon to the wet mixture, alternating with buttermilk. In a small bowl, mix a portion of the batter with molasses for the cinnamon swirl layer.
  • Layer and Swirl the Batter: Pour half of the plain batter into a greased loaf pan, followed by dollops of the cinnamon molasses mixture. Top with the remaining plain batter and use a knife to swirl the layers together.
  • Bake and Coat: Bake for 45-50 minutes, or until a toothpick comes out clean. While the loaf cools, melt the butter and mix the sugars and cinnamon for the coating. Dip the warm loaf into the butter, then roll it in the cinnamon-sugar mixture to fully coat.
