Ingredients

- 1.5 pounds beef stew meat, cubed
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 2 potatoes, cubed
- 6 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp thyme
- 2 bay leaves
- Salt and pepper to taste
- 1 cup frozen green beans or peas (optional)
Instructions
- Sear beef in a pot until browned.
- Add vegetables and sauté until softened.
- Pour in beef broth, tomatoes, thyme, and bay leaves.
- Simmer for 1 hour.
- Add green beans/peas, cook for 10 more minutes.
