  • 1.5 pounds beef stew meat, cubed
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 potatoes, cubed
  • 6 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 cup frozen green beans or peas (optional)

Instructions

  • Sear beef in a pot until browned.
  • Add vegetables and sauté until softened.
  • Pour in beef broth, tomatoes, thyme, and bay leaves.
  • Simmer for 1 hour.
  • Add green beans/peas, cook for 10 more minutes.
