To make pickled beets, you will need:

  • 10 pounds fresh beets (red, golden, or Chioggia)
  • 2 cups white sugar
  • 1 tablespoon pickling salt
  • 1 quart white vinegar (or substitute with apple cider vinegar for extra flavor)
  • ¼ cup whole cloves (optional, for added spice)

 


Instructions

Prepare the Beets

Trim the beet greens, leaving about 1 inch of stems. Wash the beets and place them in a pot of water. Boil for 25-30 minutes until tender.

Peel and Slice the Beets

After boiling, remove the beets from water and let them cool. Peel the skins and slice the beets into rounds or wedges.

Prepare the Pickling Brine

In a saucepan, combine vinegar, sugar, pickling salt, and cloves. Bring to a boil, stirring until the sugar dissolves. Boil for 5 minutes​

Pickling the Beets

Pack the sliced beets into sterilized jars and pour the hot brine over them. If canning, process the jars in a water bath for 10 minutes. Alternatively, refrigerate the beets for up to 3 months​
