- 3 large boneless, skinless chicken breasts
- 6 thick slices of bacon
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- 1/3 cup chopped green onions for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Cut each chicken breast in half lengthwise.
- Season the chicken breasts with salt and pepper on both sides, then bake for 25 minutes.
- While the chicken is baking, cook the bacon until the fat is rendered but it’s not yet crispy.
- Remove the chicken from the oven and place the halved bacon slices on top of each chicken breast.
- Put the chicken back in the oven and bake for an additional 10 minutes.
- Take the chicken out again, sprinkle the shredded cheese over the top, and bake for another 5 minutes, until the cheese is melted.
- Sprinkle the chopped green onions on top before serving.
