For the Dredge:

  • 4 large eggs

  • 2 cups skim milk

For Frying:

  • 6 to 12 cups vegetable oil (depending on your fryer size)

  1. Brine the Chicken:

    • Dissolve salt and MSG in water.

    • Submerge chicken pieces in the brine for 3 hours in the refrigerator.

    • Remove, rinse with cold water, and pat dry thoroughly.

  2. Prepare the Breading:

    • In a large bowl, mix all dry ingredients for breading thoroughly.

  3. Mix the Dredge:

    • In a separate bowl, beat the eggs and whisk in the skim milk.

  4. Bread the Chicken:

    • Dip each chicken piece in the egg-milk mixture.

    • Coat in the seasoned flour breading.

    • Let breaded chicken rest for 5 minutes, tossing occasionally for even coating.

  5. Fry the Chicken:
