Ingredients

For the Brine:

1/3 cup salt

1 tablespoon MSG (such as Accent seasoning)

8 cups water
-
1 whole roaster chicken (4β5 lbs), cut into 8 pieces
For the Breading:

1ΒΎ cups (9 oz) all-purpose flour

1 tablespoon + 1 teaspoon salt
-
1 tablespoon MSG
-
2 teaspoons granulated sugar
-
2 teaspoons ground tellicherry pepper
-
Β½ teaspoon ground white pepper
-
Β½ teaspoon paprika
-
Β½ teaspoon ground savory (summer savory)

Β½ teaspoon ground sage
-
ΒΌ teaspoon ground ginger
-
ΒΌ teaspoon ground marjoram
-
ΒΌ teaspoon onion powder
-
β teaspoon garlic powder
-
β teaspoon ground cayenne pepper
For the Dredge:

4 large eggs
-
2 cups skim milk
For Frying:

6 to 12 cups vegetable oil (depending on your fryer size)

Brine the Chicken:

Dissolve salt and MSG in water.

Submerge chicken pieces in the brine for 3 hours in the refrigerator.

Remove, rinse with cold water, and pat dry thoroughly.

Prepare the Breading:

In a large bowl, mix all dry ingredients for breading thoroughly.

Mix the Dredge:
-
In a separate bowl, beat the eggs and whisk in the skim milk.

Bread the Chicken:
-
Dip each chicken piece in the egg-milk mixture.
-
Coat in the seasoned flour breading.
-
Let breaded chicken rest for 5 minutes, tossing occasionally for even coating.

Fry the Chicken:

Heat oil in a deep fryer or Dutch oven to 300Β°F (149Β°C).

Fry 2β4 pieces at a time for 16β20 minutes, or until golden brown and internal temp hits 165Β°F (74Β°C).

Drain on a rack or paper towels for at least 5 minutes before serving.
